YAM RICE

   Sometimes when we go to the market and wonder around and do
not know what to prepare for dinner.

  Here is a simple one dish dinner YAM RICE

2 cups of rice ,washed and drained,
300 grams of yam, cubed,
4 tbsp of cooking oil
4 onions, chopped
4 dried mushrooms, soaked and chopped,
30 grams dried prawns, washed and drained,
200 grams roast port, chopped (optional)
300grams Chinese mustard green, washed, boiled and chopped,
3 cups water.
1 tbsp vegetarian oyster sauce,
1 tbsp light soy sauce, 1 tbsp dark soy sauce,
1 tbsp sesame oil and salt to taste.

Heat the oil, fry onions till light brown, dish out for later use.
Add in dried prawns, fry till fragrant, next add in the roast pork, yam
and mushrooms. Stir fry well. Transfer the rice mixture into rice cooker,
pour in the water and cook rice as usual. Put in the vegetables when the
rice is cooked, mix well. Let the rice stand for 10 minutes.
Serve rice with sprinkling of fried onions, chopped spring onions and
coriander.

SPONGE CAKE


This is the recipe that I have used since my teenage days.

7eggs
4 cups (120) self-raising flour
4 cups (180g) sugar
1 orange (rind and juice) for 1 1/2 cups(100ml)or
mixture of coconut milk and pandan juice(100ml)
1/2 tsp baking powder
1/2 tsp cream of tartar
40 ml cooking oil
pinch of salt.
* The cup is the size of 1/3cup.

Separate egg whites from yolks, beat egg whites with half of the
sugar and cream of tartar till stiff.Mix egg yolks with the remainder
half of the sugar, Add in the orange juice and rind,mix well. 
Follow by the oil. Finally blend in the flour (sifted with baking
powder). Fold in the beaten egg whites into the egg yolks mixture,
mix well. Pour into the sponge cake baking tin and  bake in
preheated oven for 35 minuted at180 degrees Celsius.


When cake is baked,  remove from the oven and immediately turn it
up side down to cool.


HOMEMADE PINEAPPLE ENZYME

2 medium pineapples,
3 lemons, washed and dried,
300 grams organic or Chinese brown candy,
A glass jar.


Cut lemons into rings and the pineapples into 1 cm thick slices.
Place pineapple slices, lemon rings and sugar in layers until the jar
is 3/4 full.
.

Do not tightened the jar cover for the first four days of fermentation.
Tightened and seal the glass jar on the fifth day if ingredients do not
turn bad(black). The enzyme is ready in thirty days.  Pour the enzyme
 into glass bottle, keep in refrigerator and is ready to drink anytime.
One part of enzyme to ten parts of water or just enzyme with ice cubes.
 Taste good. The residues can make into drinks by adding water to
 a few pieces of pineapples or lemons. It is very good plant fertilizer too.

QUICK AND EASY STEAM EGG CAKE


STEAM EGG CAKE



A bowl of eggs,
A bowl of plain flour
A bowl of sugar,
Half a bowl of coconut milk/
soy milk/water
1/2 tsp baking powder
pinch of salt


.

Beat the eggs and sugar till double.  Add in half of the flour and liquid,
mix well. Add in the remaining ingredients and blend well.
Lay grease prove paper on a nine inch round baking pan, pour the
mixture into the pan and steam for twenty minutes.

                                 
















Yummy steam egg cake is done within thirty minutes.

SWEET POTATOES



My grandma used to tell us that Sweet potatoes was their basic food
during second world war.  Now a day, some of the sweet potatoes are
more expensive then rice.

Sweet potatoes(especially the yellow-fleshed varieties) are an excellent
food because they contain a rich and complete assortment of mineral,
vitamins and amino acids.  The supply of amino acids and B-complex
vitamins found in sweet potatoes cover just about all of the body's daily
nutritional requirement. Amino acids are essential for the repair and
maintained of the body's cells, nails, skin, internal organ, blood vessels,
and red blood cells.

Many think that since sweet potatoes are starchy foods they'll make you
fat.  Actually, eating too many high-fat foods will make you over-weight.

We used to eat steamed sweet potatoes with bread fast.  Sometimes
we will cook sweet potatoes porridge, sweet potatoes desert(tong sui). 
In fact, there are many ways of preparing sweet potatoes.

Recipe for Sweet Potatoes desert(tong sui)

Ingredients
500g sweet potatoes
6 rice bowls of water
50g of old ginger
150 g of rock sugar
4 PCs of pandan leaves
pinch of salt

Method
Peel sweet potatoes,cut into cubes, soak in salt water for 10 minutes,
drain. Boil the water,  add in smashed ginger ,pandan leaves and rock
sugar for about 15 minutes.Add in the sweet potatoes and boil for
another 10 minutes or till its soft.
Serve will its hot.

Sweet Potatoes Porridge

150 g sweet potatoes
5 bowls of water (rice bowl)
1/2 cup of rice(the cup from the rice cooker)
a pinch of salt

Peel the sweet potatoes,cubed and soak in salt water for 10 min.
Wash the rice.Boil the water, then put in the rice and sweet potatoes. 
Boil for 5 minutes  or till the sweet potatoes is soft. Add in the salt.
Let stand for 5 minutes, serve hot with a sprinkling of fried onion
chopped spring onion.
